nothavanas: (shortcake)
this is good on pretty much any sort of bread.

2 sticks butter
2 tblsp honey
1/4 tsp cinnamon
1/4 tsp vanilla extract

(use the good stuff--local honey and Tahitian vanilla--if you've got it, which i do.)

Put the softened butter in a bowl and whip briefly with a handmixer. When it doesn't look like sticks anymore, add the flavorings. Continue whipping until it's all mixed together and the butter's light and fluffy. Transfer to tupperware and put in the fridge. Feel free to lick the beaters, meanwhile ignoring your cardiologist. You don't have one? You will if you keep licking butter off of beaters.

So last night I was looking for my sourdough recipes on my computer, and ran across one for cinnamon biscuits. I decided they sounded better than bread, plus I didn't have very much flour on hand, so I went for it.
They are delicious by themselves, excellent with black raspberry jam, and out of this world with dark wildflower honey. Something about that particular strong honey goes perfectly with the cinnamon and nutmeg spices.

Witches Brew/Honey Cookies

I wanted extras to share with friends at the Tricky Pixie show and to take to group meeting, so I did a 1.5 batch with a full egg, instead of one egg yolk. I needed to add some extra flour (several handfuls, maybe half a cup or slightly less) to get to a rollable consistency, but when I did they came out beautifully. This batch I made with TJ's Mesquite Honey, which is just full of awesome flavor. And I shaped them like space shuttles, because Endeavor just launched.
